I decided to make some homemade pork belly a few days ago when I saw a pic of a Korean dish called bossam, which means boiled pork wraps!!! I do think that the spice and zestiness from the kimchi do add that beautiful flavor to the entire dish! Of course, there's a similar dish in Vietnamese culture called 'banh trang cuon thit heo', which means pork spring rolls! So if you want to, you can wrap the pork belly in some rice paper with lettuce, shredded carrots, bean sprouts, sliced cucumbers, some herbs , and dip it in fish sauce!
