FALL INSPIRED PROTEIN PANCAKES with BANANA FOSTER SAUCE recipe! Sweet, delicious, and are super easy to make!
In a skillet, melt the butter over medium heat. Stir in the brown sugar, sweetener, vanilla extract, and cinnamon until the sugar dissolves. Add the banana slices and simmer for 1-2 minutes. If you want the sauce to be less sweet, I would suggest to either use bananas that aren’t too riped or decrease the amount of sugar being used! 🤔Also, for those who favor a bit of a bite to their bananas, you can just add it in for 1 minute and stir to coat. :)

Happy Tuesday everyone!!! I hope you guys had an amazing weekend! Awhile ago, I told you guys that this year, I’m trying to adopt a plant-based diet a couple of times a week - not only to help improve my health but also to help the environment and animal welfare as well! It was incredibly easy to make these vegan tacos and they are INCREDIBLY delicious!!! Not only do the beluga lentils have a hint of spice from the cumin seasonings, the guacamole and the chipotle crema lend a creaminess that help elevate the dish to a whole new level. Top these babies with some crispy and refreshing pea shoot slaw and I assure you that these are easily some of the tastiest vegan tacos that you will ever eat!!!
Note: This post is in collaboration with Purple Carrot, a food delivery company that focuses on plant-based foods! The link for the recipe will be here! If you don't want to click there, I will go ahead and put the recipe that they posted on their page down below:
•Extra Virgin Olive Oil
•1 Medium Onion
•1 Large bell Pepper(s)
•Serrano peppers or Jalapenos (*pick and choose whichever you like depending on your heat preference)
•3 Garlic cloves
•1 tbsp paprika & 1/2 tbsp cumin
•1 can of whole peeled tomatoes (*if you have regular tomatoes in hand, you can soften them up in the microwave and crush them with your hands)
•6 eggs 🍳
•Feta cheese 🧀
•Salt and Pepper to taste @mccormickspice
•Heat olive oil in a large skillet or a sauté pan over medium-high heat
•Add the chopped onion and bell pepper to the pan. Cook until everything slightly softens
•Add the diced chili and garlic into the pan and sauté for about 5-7 mins
•Sprinkle the paprika and cumin and stir around for about a minute
• Take the crushed tomatoes and add it to the pan. Reduce the heat and let it simmer for 15 or so min. You can either increase or decrease your simmering time if you like a slightly runnier or thicker sauce. Add salt and pepper to taste.
•Make 6 wells and slowly break the eggs directly into them. While they're cooking, you can spoon a bit of the sauce to cover the egg white. •At this point, I will cover the pan with a lid and reduce the heat to the lowest setting. It should take another 7-8 minutes and then you are done! Sprinkle some cilantro and feta cheese on top and you got yourself a stellar dish for breakfast, lunch, and dinner! As always, cooking should be fun! Just adjust the cooking time to your liking. ❤
Sorry for the 2 weeks hiatus guys! I took 2 weeks off from the Insta life to focus on my studies and I'm really glad that it is paying off! It has been a crazy month so far but you gotta work hard for your dream right?! If you have any questions about the lemon bars or any recipe suggestions, feel free to comment down below and let me know!!! :)
•2 cups + 2 tbsp all-purpose flour
•1/2 pound unsalted butter at room temperature
•1/2 cup granulated sugar
•1/4 teaspoon kosher salt
•4 extra-large eggs at room temp
•1 ½ cups granulated sugar
•⅔ cup lemon juice (if you want to add more lemon juice, then just add a bit more flour to compensate for the extra filling!)
•Zest from 2-3 lemons (adjust it to your taste)
•¼ cup flour
•Confectioners' sugar/powdered sugar
■Preheat the oven to 350 degrees F
■For the crust, blend the softened butter, sugar, flour, and salt until it’s well mixed. With floured hands, press the mixture into a 9x13 inch baking sheet pan
■Bake the crust in the preheated oven for 15-20 minutes until the surface has a light golden brown color. Let it cool down a bit before pouring the filling onto the crust
■In another bowl, whisk together the flour, sugar, and lemon zest. Then whisk in the eggs and the lemon juice until the mixture is well blended. Once the crust is cooled to room temp, pour the filling onto the crust and bake it for 24-27 minutes. Just give it a jiggle or two and see if the filling in the middle is set
■Once done, let it cool down to room temp. Cut into squares/rectangles and dust these delicious bites with confectioners/powdered sugar! ♡also, don't worry about being perfect w the cut! It gives the bars that beautiful rustic look!
I decided to make some homemade pork belly a few days ago when I saw a pic of a Korean dish called bossam, which means boiled pork wraps!!! I do think that the spice and zestiness from the kimchi do add that beautiful flavor to the entire dish! Of course, there's a similar dish in Vietnamese culture called 'banh trang cuon thit heo', which means pork spring rolls! So if you want to, you can wrap the pork belly in some rice paper with lettuce, shredded carrots, bean sprouts, sliced cucumbers, some herbs , and dip it in fish sauce!
If you have some leftover nuts and dried fruits in your kitchen and don't know what to do with them, you can throw them together with some oatmeal and a sweetener of your choice to make some delicious granola bars!
▪ 2 cups of old-fashioned rolled oats
▪ 2 cups of nuts (you can substitute this with sliced almonds, sunflower seeds, or any other kind of nuts that would like)
▪ 1/2 cup of raw honey or agave syrup (anything that fancies you)
▪ 1/4 cup of dark brown sugar
▪ 1 oz unsalted butter
▪ 2 teaspoons vanilla extract
▪ 1/2 teaspoon kosher salt
▪ 1 1/2 cups of dried fruits 🍒🍇🍍
▪ 1/2 cup of chocolate chips (optional)
▪ Heat oven to 350 degrees F
▪ Line 8-inch or 9-inch square pan with aluminum foil
▪ Use oil or spray to make sure all sides are covered
▪ Add oats and nuts to the baking sheet and bake for 10-15 minutes
▪Meanwhile, combine butter, honey, brown sugar, vanilla extract and the kosher salt in a small saucepan over medium heat
▪ Stir occasionally until butter melts and the sugar completely dissolves
▪ Pour the toasted oats and nuts into the butter mixture
▪ Mix it well and add 1/4 cup of chocolate chips so that it will help hold the granola together
▪ Transfer the mixture to a pan lined with parchment paper
▪ Firmly press the mixture into the pan for about a minute
▪ Scatter the remaining chocolate chips over the pressed granola mixture
▪ Refrigerate for a few hrs and you are DONE! #ad
